Dr. Jackson is a renowned social entrepreneur featured on The Food Network documentary called Hunger Hits Home. She turned her personal experience with hunger into a powerful movement—feeding over 31 million meals to children and families through her national award-winning organization, Minnie’s Food Pantry. Founded in honor of her mother, the late Dr. Minnie Hawthorne-Ewing, her nonprofit has expanded from a modest 500-square-foot space to a 28,000-square-foot hub with a Life Lab training center and social enterprise store, operating in multiple states.
